Topsy Turvy 40th Birthday

Both Tiers - Chocolate Cake iced with Whipped Buttercream

My first ever Topsy Turvy cake was a success! I was so happy that it stayed in place!

The Whipped Buttercream was a recipe test as I have been trying to come up with a "whiter" buttercream to use for wedding cakes and such. With a little tweaking this has great potential.

Bottom Tier - Vanilla Cake filled with Raspberries and White Chocolate Cream Cheese Icing

Top and Middle Tier - Banana Cake with Chocolate Chunks iced in White Chocolate Cream Cheese Icing.

The wedding colours of purple, fushia, teal and chocolate brown really made this cake spectacular! It was so much fun to create and the best compliment I received was from the groom..."Often you see a cake that looks good but when you taste it it's just kinda bland. That cake tastes awesome! "

Buttercream and Roses Wedding Cake

Top and Bottom Tier - Lemon Poppyseed Cake filled with Lemon Curd iced in Buttercream
Middle Tier - Vanilla Cake iced in Buttercream
The fresh flowers really made this simply iced cake look elegant.
A 3 tier wedding cake is the largest that can be accomodated by my home fridge. The tiers are 6", 9" and 12" and each tier is 4" high and will serve between 85 and 100 people.

Both Tiers - Lemon Almond Cake in Rolled Fondant
I was so impressed that this cake survived 2 plane flights followed by a 4 hour drive to get to its destination...simple, elegant (and durable) wedding cake.
